Ingredients
  

  • 1 pound of fresh strawberries
  • 1 can of full-fat coconut milk
  • 2 tablespoons of pure maple syrup
  • 1 teaspoon of pure vanilla extract
  • 2 tablespoons of black sesame seeds or mini chocolate chips
  • 1 pinch of sea salt

Method
 

  1. Remove the chilled coconut milk can from the refrigerator. Carefully scoop out the solid white cream into your chilled mixing bowl.
  2. Use your hand mixer to beat the coconut cream on high speed. Gradually add the maple syrup, vanilla extract, and a pinch of salt. Continue whipping for about 3 to 5 minutes until the mixture forms stiff, glossy peaks.
  3. Wash the strawberries and pat them completely dry with a clean cloth. Slice the green leafy top off each strawberry to create a flat base.
  4. Slice the top third of each strawberry off. This smaller piece will serve as the hat, while the larger bottom part forms the body of your Strawberry Santas.
  5. Transfer your whipped cream into a piping bag. Pipe a generous swirl of cream onto the flat cut surface of the large strawberry base. Place the small strawberry 'hat' on top of the cream.
  6. Pipe a tiny dot of cream on the very top of the hat to create a pom-pom. Finally, use a toothpick to place two black sesame seeds or chocolate chips onto the cream 'face' to create eyes.

Notes

Always chill your bowl and beaters for better cream stability. Serve immediately for the best texture.
