  • 1 tablespoon high-quality gelatin powder (approx. 7-10g)
  • 1/4 cup cold water or liquid
  • 2 cups hot flavorful liquid (fruit juice, coffee, or herbal tea)
  • 2-3 tablespoons natural sweetener
  • 1 teaspoon fresh citrus zest

Method
 

  1. Pour 1/4 cup of cold water into a small heat-proof bowl and sprinkle gelatin powder over the surface. Let it bloom for 5-10 minutes.
  2. Heat 2 cups of your flavorful liquid in a heavy-bottomed saucepan, adding sweeteners and aromatics, bringing it to a gentle simmer.
  3. Remove from heat and gently stir in the bloomed gelatin until it fully dissolves and the mixture is clear.
  4. Allow the mixture to cool slightly at room temperature before pouring into molds.
  5. Refrigerate for 4-6 hours or overnight until set.

Notes

Ensure to respect the blooming phase and avoid using fresh tropical fruits like pineapple or kiwi, which can prevent setting.
