Ingredients

  • 1 pound fresh asparagus
  • 3-4 cloves fresh garlic
  • 2 tablespoons unsalted butter
  • 1 tablespoon extra virgin olive oil
  • Sea salt to taste
  • Cracked black pepper to taste
  • Lemon zest (optional)

Method

  1. Wash the asparagus spears under cool water and pat them dry. Trim the woody ends.
  2. Place a large skillet over medium-high heat and add the olive oil and half of the butter. Allow the butter to melt until it shimmers.
  3. Add the asparagus spears to the skillet in a single layer and cook undisturbed for 2-3 minutes.
  4. Season with sea salt and cracked black pepper, then toss the spears to ensure even coating.
  5. Reduce heat to medium, add the remaining butter and minced garlic to the pan, stirring until garlic is fragrant and pale golden.
  6. Continue cooking for an additional 2 minutes until the asparagus is tender-crisp. Serve immediately, finishing with lemon juice or zest if desired.

Notes

Ensure the asparagus is dry before cooking to prevent steaming. Manage heat carefully when cooking garlic to maintain its flavor.
