  • 1 cup unsalted grass-fed butter, room temperature
  • 1/2 cup unrefined cane sugar
  • 1 3/4 cups organic all-purpose flour
  • 1/4 teaspoon sea salt
  • 1 organic egg yolk
  • 1 teaspoon pure vanilla bean paste
  • 1/2 cup high-quality flower jam (rose petal, lavender, or hibiscus)
  • Dried culinary lavender (optional)

Method
 

  1. Cream the butter and sugar together until pale and fluffy.
  2. Incorporate the egg yolk and vanilla bean paste, mixing until combined.
  3. Sift in the flour and sea salt, folding gently without overmixing.
  4. Chill the dough for at least 30 minutes in the refrigerator.
  5. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Shape the chilled dough into balls and place on the baking sheet.
  7. Create indentations in the center of each ball and fill with flower jam.
  8. Bake for 10 to 12 minutes until set and lightly golden.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Ensure the jam is thick; if watery, simmer to reduce. Chill dough balls if too soft before pressing thumbprints.
