- Cream the butter and sugar together until pale and fluffy.
- Incorporate the egg yolk and vanilla bean paste, mixing until combined.
- Sift in the flour and sea salt, folding gently without overmixing.
- Chill the dough for at least 30 minutes in the refrigerator.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Shape the chilled dough into balls and place on the baking sheet.
- Create indentations in the center of each ball and fill with flower jam.
- Bake for 10 to 12 minutes until set and lightly golden.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Ensure the jam is thick; if watery, simmer to reduce. Chill dough balls if too soft before pressing thumbprints.
