  • 1 Cup Heavy Cream
  • 1 Tablespoon Natural Vanilla Extract
  • 1/3 Cup Monk Fruit or Allulose
  • 1 Pinch Sea Salt

Method
 

  1. Bloom the gelatin: Pour one cup of cold milk into a shallow bowl. Sprinkle gelatin powder evenly over the surface and let sit for 10 minutes.
  2. Heat the remaining milk and heavy cream: In a saucepan over medium-low heat, bring the mixture to exactly 160°F (71°C).
  3. Dissolve the gelatin: Add the bloomed gelatin to the warm liquid and whisk continuously until dissolved.
  4. Sweeten and flavor: Whisk in your sweetener, vanilla, and salt until fully incorporated.
  5. Homogenize: Transfer the mixture to a blender and pulse on high for 30 seconds.
  6. Set: Pour into silicone molds or a glass dish, let cool at room temperature for 20 minutes, then refrigerate for at least 4 hours.

Notes

Be sure to use high-quality ingredients for the best results. Avoid using low-fat milk or cheap gelatin. For a plant-based snack, substitute the gelatin with agar agar.
