  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup plant-based milk
  • ½ cup vegetable oil
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons vanilla extract
  • 1 cup hot water or coffee

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour the cake pans or line the cupcake tin with paper liners.
  2. In a large mixing bowl, whisk together the all-purpose flour, sugar, cocoa powder, baking soda, and salt.
  3. In another bowl, whisk together the plant-based milk, vegetable oil, apple cider vinegar, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix gently with a rubber spatula until just combined.
  5. Gradually add the hot water or coffee to the batter until smooth.
  6. Divide the batter into the prepared pans or fill cupcake liners two-thirds full.
  7. Bake cakes for 30-35 minutes or cupcakes for 20-25 minutes until a toothpick comes out clean.
  8. Let cool in pans for 10-15 minutes before transferring to a wire rack to cool completely.
