Ingredients
  

  • 4 envelopes of unflavored gelatin powder
  • 2 cups filtered water (1 cup cold, 1 cup boiling)
  • 2 cups organic fruit juice (pomegranate, cranberry, or orange)
  • 1/2 cup honey or agave nectar
  • 1.5 cups spirits (vodka, gin, or rum)
  • 2 cups fresh berries (raspberries or blueberries)
  • 1/4 cup fresh mint leaves

Method
 

  1. Bloom the Gelatin: Pour one cup of cold filtered water into your large mixing bowl. Sprinkle the unflavored gelatin powder evenly over the surface. Let it sit undisturbed for about 5 to 7 minutes.
  2. Heat the Base: In a medium saucepan, combine the remaining cup of water with the organic fruit juice and honey. Bring the mixture to a gentle simmer over medium heat.
  3. Combine and Dissolve: Carefully pour the hot juice mixture over the bloomed gelatin. Use your whisk to stir the liquid constantly for about 2 minutes.
  4. Integrate the Spirits: Once the mixture has cooled slightly but is still liquid, slowly pour in your chosen spirits. Stir gently to incorporate.
  5. Prepare the Mold: Lightly grease your mold with a tiny amount of neutral oil and place a few fresh berries at the bottom of the mold.
  6. The First Chill: Pour enough of the gelatin mixture into the mold to cover the berries. Refrigerate for about 30 minutes until it is tacky but not fully set.
  7. Final Pour and Set: Gently pour the remaining gelatin mixture into the mold, add the rest of the berries, and refrigerate for at least 6 hours, or ideally overnight.

Notes

Choose organic juices and high-quality grass-fed gelatin for best results. Avoid using fresh pineapple, kiwi, or papaya. Store in the refrigerator and consume within 3 to 4 days.
