Ingredients
  

  • 2 cups Greek yogurt or plant-based alternative
  • 3 cups mixed berries (fresh or frozen)
  • 3 to 4 tablespoons maple syrup or agave nectar
  • 1 teaspoon pure vanilla extract
  • 2 teaspoons agar-agar powder
  • 1/2 cup filtered water
  • Fresh mint leaves (for garnish)

Method
 

  1. In a medium mixing bowl, combine the yogurt, vanilla extract, and two tablespoons of maple syrup. Whisk until smooth.
  2. Dissolve agar-agar in a small amount of hot water and mix it into the yogurt mixture.
  3. Pour the yogurt mixture into a lined 8x8-inch baking dish and smooth the top. Refrigerate for 30 minutes until firm.
  4. Blend the berries with the remaining sweetener until smooth. Optionally strain to remove seeds.
  5. In a small saucepan, combine the water and remaining agar-agar. Bring to a gentle boil for 2 minutes.
  6. Whisk the hot agar-agar mixture into the berry purée, then pour over the set yogurt layer.
  7. Chill the dish in the refrigerator for at least 2-4 hours, preferably overnight.
  8. Remove from the dish using parchment paper and slice into squares. Garnish with mint leaves.

Notes

Ensure the yogurt layer is cold when pouring the warm berry mixture to prevent layers from separating. Activate the agar-agar properly by boiling; don't skip this step.
