- Prepare Your Vegetables: Wash and prep all produce. Chop onions, carrots, and celery; mince garlic; cube potatoes and sweet potatoes; slice zucchini.
- Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery, sauté for 8-10 minutes until softened.
- Add Garlic and Hardier Vegetables: Stir in minced garlic, cook for 1 minute. Add cubed Yukon Gold and sweet potatoes, stir well and warm through for 2-3 minutes.
- Introduce Liquids and Herbs: Pour in canned diced tomatoes and vegetable broth. Add thyme, rosemary, and bay leaf, bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes.
- Continue Simmering and Check Tenderness: Ensure heat remains low, check potatoes for tenderness after 20-25 minutes.
- Add Zucchini and Greens: Stir in zucchini and simmer uncovered for another 5-7 minutes.
- Incorporate Leafy Greens: Add chopped kale or spinach, stir in for 2-3 minutes until wilted.
- Season and Serve: Remove herb bundles, season to taste, and serve garnished with parsley.
