Ingredients
  

  • 2 tablespoons olive oil, extra virgi
  • 2 medium yellow onions, finely chopped
  • 3 large carrots, peeled and cut into 1/2-inch rounds
  • 3 celery stalks, diced
  • 4-5 cloves garlic, minced
  • 2 lbs Yukon Gold or red potatoes, peeled and cut into 1-inch cubes
  • 1 large sweet potato, peeled and cut into 1-inch cubes
  • 2 medium zucchini, cut into 1/2-inch rounds or half-moons
  • 1 (28-ounce) can canned diced tomatoes, undrained
  • 6 cups low sodium vegetable broth
  • 4-5 fresh thyme sprigs, tied together
  • 2 fresh rosemary sprigs, tied together
  • 1 bay leaf
  • 5-6 ounces kale or spinach, roughly chopped
  • 1-2 teaspoons sea salt, or to taste
  • 1/2 teaspoon freshly ground black pepper, or to taste
  • 1/4 cup fresh parsley, chopped

Method
 

  1. Prepare Your Vegetables: Wash and prep all produce. Chop onions, carrots, and celery; mince garlic; cube potatoes and sweet potatoes; slice zucchini.
  2. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery, sauté for 8-10 minutes until softened.
  3. Add Garlic and Hardier Vegetables: Stir in minced garlic, cook for 1 minute. Add cubed Yukon Gold and sweet potatoes, stir well and warm through for 2-3 minutes.
  4. Introduce Liquids and Herbs: Pour in canned diced tomatoes and vegetable broth. Add thyme, rosemary, and bay leaf, bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes.
  5. Continue Simmering and Check Tenderness: Ensure heat remains low, check potatoes for tenderness after 20-25 minutes.
  6. Add Zucchini and Greens: Stir in zucchini and simmer uncovered for another 5-7 minutes.
  7. Incorporate Leafy Greens: Add chopped kale or spinach, stir in for 2-3 minutes until wilted.
  8. Season and Serve: Remove herb bundles, season to taste, and serve garnished with parsley.
