Ingredients
  

  • 3 large overripe bananas (mashed)
  • 1 tablespoon flax meal + 3 tablespoons water (flax egg)
  • 1.5 cups all-purpose flour
  • 3/4 cup coconut sugar
  • 1/3 cup melted coconut oil
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamo
  • 1/4 cup plant milk

Method
 

  1. Preheat your oven to 350°F (175°C) and prepare your loaf pan.
  2. To make the flax egg, mix flax meal with water and let it sit for 5 minutes.
  3. Mash the overripe bananas in a large mixing bowl.
  4. Add melted coconut oil, coconut sugar, plant milk, vanilla extract, and flax egg to the mashed bananas and whisk together.
  5. In a separate bowl, whisk the flour, baking soda, cinnamon, and a pinch of salt.
  6. Gently fold the dry ingredients into the wet mixture until just combined.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 50 to 60 minutes, checking with a toothpick for doneness.
  9. Let the bread cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Always use overripe bananas for the best sweetness. You can substitute coconut oil with unsweetened applesauce for a low-fat version.
