- Preheat your oven to 350°F (175°C) and prepare your loaf pan.
- To make the flax egg, mix flax meal with water and let it sit for 5 minutes.
- Mash the overripe bananas in a large mixing bowl.
- Add melted coconut oil, coconut sugar, plant milk, vanilla extract, and flax egg to the mashed bananas and whisk together.
- In a separate bowl, whisk the flour, baking soda, cinnamon, and a pinch of salt.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 50 to 60 minutes, checking with a toothpick for doneness.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
Notes
Always use overripe bananas for the best sweetness. You can substitute coconut oil with unsweetened applesauce for a low-fat version.
