  • 1 cup filtered water
  • 1 cup skim milk or unsweetened plant-based milk
  • Natural sweetener to taste (erythritol, stevia, or monk fruit)
  • 1 teaspoon pure vanilla extract or vanilla bean paste
  • A tiny pinch of salt

Method
 

  1. Bloom the Gelatin: Sprinkle gelatin over 1/2 cup of cold water and let sit for 5-10 minutes.
  2. Gently Heat the Liquid Base: Combine remaining 1 cup of water with milk in a saucepan and heat over medium-low until warm.
  3. Dissolve the Bloomed Gelatin: Add bloomed gelatin to warm liquid and whisk until completely dissolved.
  4. Incorporate Sweetener and Vanilla: Stir in sweetener and vanilla extract/paste, adding salt before tasting.
  5. Prepare for Chilling: Strain mixture through a fine-mesh sieve if desired.
  6. Pour and Chill: Pour the mixture into molds and refrigerate for at least 4 hours until set.
