Ingredients

  • 1 pint of organic strawberries
  • 2 cups of fresh raspberries
  • 1 large dragon fruit (pitaya)
  • 2 red apples (Honeycrisp or Pink Lady)
  • 1 cup of red grapes
  • 1 pomegranate
  • Fresh mint leaves
  • Dark chocolate chips (70% cacao or higher)
  • Lemon juice

Method

  1. Wash and dry all produce thoroughly. Pat the berries dry carefully with a reusable cloth to avoid bruising.
  2. Prepare the foundation by placing small bowls of chocolate or yogurt onto the platter first.
  3. Slice dragon fruit into thick rounds and use a heart-shaped cutter to create shapes. Slice apples thinly and toss in lemon juice.
  4. Arrange the fruit by color and size, starting with larger items like apple slices and dragon fruit hearts.
  5. Fill gaps with clusters of grapes and strawberries, transitioning from deep reds to soft pinks.
  6. Fill tiny spaces with raspberries and blueberries for a lush appearance.
  7. Sprinkle pomegranate arils over the tray, and tuck in fresh mint leaves for decoration.

Notes

Assembly of the fruit tray is best done an hour before serving to maintain freshness. Store leftovers in airtight containers, keeping different fruit types separate to avoid mushiness.
