- Preheat your oven to 350°F (175°C) and grease your loaf pan thoroughly.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition, then stir in vanilla extract.
- In a separate bowl, mash the ripe bananas until smooth.
- Whisk the flour, baking soda, and salt together in a small bowl.
- Gradually alternate adding the dry ingredients and mashed bananas into the butter mixture, folding gently.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60 to 70 minutes, or until a skewer inserted comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
Notes
Use bananas that are heavily spotted with black marks for maximum sweetness and moisture. Ensure eggs and butter are at room temperature for better mixing. Over-mixing should be avoided to maintain a light texture.
