  • 2 Large Eggs
  • 1 1/2 Cups All-Purpose Flour

  • 1/2 Teaspoon Salt

Method
 

  1. Preheat your oven to 350°F (175°C) and grease your loaf pan thoroughly.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition, then stir in vanilla extract.
  4. In a separate bowl, mash the ripe bananas until smooth.
  5. Whisk the flour, baking soda, and salt together in a small bowl.
  6. Gradually alternate adding the dry ingredients and mashed bananas into the butter mixture, folding gently.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60 to 70 minutes, or until a skewer inserted comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Use bananas that are heavily spotted with black marks for maximum sweetness and moisture. Ensure eggs and butter are at room temperature for better mixing. Over-mixing should be avoided to maintain a light texture.
