  • 4-5 Tablespoons Raw Honey or Maple Syrup
  • 3 Tablespoons Grass-Fed Gelatin Powder
  • 1 Tablespoon Citrus Zest (Mixed)
  • 1 Cup Filtered Water

Method
 

  1. Bloom the Gelatin: Pour one cup of room-temperature filtered water into a small bowl. Sprinkle the grass-fed gelatin powder evenly over the surface and let it sit for five to ten minutes.
  2. Extract the Essence: Zest one orange, one lemon, and one lime into a saucepan. Juice the fruits until you reach the required measurements.
  3. Heat the Juices: Pour the fresh citrus juices into the saucepan with the zest. Add honey or maple syrup and warm the mixture gently until the sweetener dissolves.
  4. Combine the Elements: Add the bloomed gelatin mixture to the saucepan and whisk until completely dissolved.
  5. Final Strain (Optional): Pour the liquid through a fine-mesh sieve into a pouring pitcher to remove zest pieces and bubbles.
  6. The Setting Phase: Pour the liquid into molds or glass cups and refrigerate for at least four to six hours until set.

Notes

Use organic citrus for the best flavor and avoid boiling gelatin to ensure it sets properly. Refrigerate the dessert for up to five days, but do not freeze.
