- Heat the Juices: Pour the fresh citrus juices into the saucepan with the zest. Add honey or maple syrup and warm the mixture gently until the sweetener dissolves.
- Combine the Elements: Add the bloomed gelatin mixture to the saucepan and whisk until completely dissolved.
- Final Strain (Optional): Pour the liquid through a fine-mesh sieve into a pouring pitcher to remove zest pieces and bubbles.
- The Setting Phase: Pour the liquid into molds or glass cups and refrigerate for at least four to six hours until set.
