  • 2 tablespoons Extra Virgin Olive Oil
  • 1 large Yellow Onion, finely diced
  • 3 cloves Garlic, minced
  • 4 cups Vegetable Broth (low sodium)
  • 1 bunch Fresh Thyme (approximately 1/2 oz or 15g)
  • 1 large Russet Potato, peeled and diced into 1/2-inch cubes
  • 1/2 cup Heavy Cream (or full-fat coconut milk for dairy-free)
  • 1 tablespoon Fresh Lemon Juice
  • Salt and Freshly Ground Black Pepper to taste
  • Optional Garnish: Fresh thyme sprigs, olive oil, or toasted croutons

Method
 

  1. Heat the olive oil in a heavy-bottomed pot over medium heat, add the onion, and sauté for 6-8 minutes until softened.
  2. Add minced garlic, sauté for 1 minute, then add fresh thyme sprigs.
  3. Incorporate diced potatoes, stir to coat, and pour in vegetable broth.
  4. Bring to a gentle boil, reduce heat, cover, and simmer for 15-20 minutes until potatoes are fork-tender.
  5. Remove thyme sprigs from the soup.
  6. Blend the soup until smooth using an immersion blender.
  7. Stir in heavy cream (or coconut milk) and lemon juice.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished as desired.
