Ingredients
  

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 1 teaspoon ground cinnamo
  • ¼ teaspoon ground nutmeg
  • ¾ cup plant-based milk
  • 1 large egg
  • ¼ cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2-3 tablespoons plant-based milk (for glaze)
  • ½ teaspoon vanilla extract (for glaze)
  • A pinch of lemon zest (for glaze)

Method
 

  1. Preheat your oven to 350°F (175°C) and grease your donut pan.
  2. In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix the wet ingredients: plant-based milk, egg (or flax egg), melted coconut oil, and vanilla extract.
  4. Combine the wet and dry mixtures, mixing gently until just combined.
  5. Fill the donut pan cavities about two-thirds full with the batter.
  6. Bake for 10-12 minutes until golden brown and they spring back when touched.
  7. Let the donuts cool in the pan for 5 minutes, then transfer to a wire rack.
  8. Prepare the glaze by mixing powdered sugar, plant-based milk, vanilla extract, and lemon zest until smooth. Dip the tops of the cooled donuts in the glaze and allow it to set.

Notes

Use organic ingredients where possible. For a vegan version, substitute the egg with a flax egg. Store unglazed donuts at room temperature in an airtight container for up to 2 days.
