- Add the melted oil and vanilla to the milk mixture and whisk until combined.
- Pour the wet ingredients into the dry ingredients and mix gently until just combined; a few lumps are fine.
- Allow the batter to rest for 5-10 minutes.
- Heat a non-stick griddle over medium-low heat and lightly grease it.
- Pour ¼ cup of batter per hotcake onto the griddle, cooking for 2-3 minutes per side until golden brown.
- Serve immediately with your favorite toppings.
