Ingredients
  

  • 2 tablespoons agar-agar powder
  • 1 cup mixed fresh berries (raspberries, blueberries, strawberries, blackberries)
  • ½ cup fresh citrus juice (lemon or lime)
  • 2 cups filtered water
  • ¼ cup natural sweetener (maple syrup, agave nectar, or sugar-free alternative)
  • Optional: fresh mint leaves for garnish

Method
 

  1. Prepare your fruit: wash and slice any larger berries, squeeze citrus juice.
  2. Bloom the agar-agar by whisking it into water in a saucepan until dissolved, then let sit for 5 minutes.
  3. Heat the mixture to a rolling boil for 2-3 minutes while whisking.
  4. Remove from heat and stir in sweetener and citrus juice, adjusting to taste.
  5. Gently fold in prepared berries, then pour mixture into molds.
  6. Chill at room temperature for 15-20 minutes, then refrigerate for 2-3 hours until set.
  7. Serve and garnish with mint leaves or extra berries as desired.

Notes

Ensure to use agar-agar powder and not flakes for a consistent result. Adjust sweetness based on the ripeness of the fruit.
