Method
- Prepare your fruit: wash and slice any larger berries, squeeze citrus juice.
- Bloom the agar-agar by whisking it into water in a saucepan until dissolved, then let sit for 5 minutes.
- Heat the mixture to a rolling boil for 2-3 minutes while whisking.
- Remove from heat and stir in sweetener and citrus juice, adjusting to taste.
- Gently fold in prepared berries, then pour mixture into molds.
- Chill at room temperature for 15-20 minutes, then refrigerate for 2-3 hours until set.
- Serve and garnish with mint leaves or extra berries as desired.
Notes
Ensure to use agar-agar powder and not flakes for a consistent result. Adjust sweetness based on the ripeness of the fruit.
