Ingredients
  

  • Old-Fashioned Rolled Oats
  • Ground Flaxseed Meal
  • Chia Seeds
  • Hemp Hearts
  • Pumpkin Seeds
  • Natural Almond Butter
  • Raw Honey or Grade A Maple Syrup
  • Cinnamo
  • Sea Salt
  • Dark Chocolate Chips or Goji Berries (optional)

Method
 

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, flaxseed meal, chia seeds, hemp hearts, pumpkin seeds, cinnamon, and sea salt. Stir these dry ingredients well.
  3. Add the almond butter and honey to the center of the bowl. If the almond butter is too firm, warm it slightly before adding.
  4. Gently fold the wet and dry ingredients together until a thick, tacky dough forms.
  5. Fold in the dark chocolate chips or Goji berries.
  6. Use a cookie scoop to portion out the dough onto the prepared baking sheet and flatten them slightly.
  7. Bake for 12 to 15 minutes until lightly golden-brown around the edges.
  8. Let the cookies rest on the pan for 10 minutes, then transfer them to a wire rack to cool completely.

Notes

Let the dough sit for five minutes before scooping to improve texture. Ensure almond butter only contains nuts and salt. If dough is too crumbly, add a teaspoon of water or extra honey.
