Ingredients
  

  • 500 grams fresh strawberries
  • 2 teaspoons agar-agar powder
  • 3 to 4 tablespoons maple syrup
  • 1 whole vanilla bea
  • 2 cups filtered water
  • Fresh lemon juice

Method
 

  1. Wash and hull the strawberries, then place them in a blender.
  2. Blend strawberries with one cup of water and lemon juice until smooth.
  3. In a saucepan, combine the remaining cup of water, maple syrup, and scraped vanilla seeds. Heat over medium heat, adding the empty vanilla pod.
  4. Sprinkle in the agar-agar, whisking constantly and bringing to a gentle simmer for two minutes.
  5. Remove the vanilla pod and pour the warm mixture into the strawberry puree while whisking.
  6. Pour the mixture into molds or jars, pop any surface bubbles with a toothpick.
  7. Let cool at room temperature for 20 minutes, then refrigerate for at least two hours.
  8. Gently unmold and serve.

Notes

This strawberry vanilla gelatin is best enjoyed fresh. It will keep in the fridge for up to five days. Agar-agar sets faster; ensure boiling for proper setting.
