Method
- Wash and hull the strawberries, then place them in a blender.
- Blend strawberries with one cup of water and lemon juice until smooth.
- In a saucepan, combine the remaining cup of water, maple syrup, and scraped vanilla seeds. Heat over medium heat, adding the empty vanilla pod.
- Sprinkle in the agar-agar, whisking constantly and bringing to a gentle simmer for two minutes.
- Remove the vanilla pod and pour the warm mixture into the strawberry puree while whisking.
- Pour the mixture into molds or jars, pop any surface bubbles with a toothpick.
- Let cool at room temperature for 20 minutes, then refrigerate for at least two hours.
- Gently unmold and serve.
Notes
This strawberry vanilla gelatin is best enjoyed fresh. It will keep in the fridge for up to five days. Agar-agar sets faster; ensure boiling for proper setting.
