  • 500g Fresh Strawberries, ripe and hulled
  • 250ml Heavy Whipping Cream, cold for better peaks
  • 3-4 tablespoons Raw Honey or Maple Syrup, adjust for sweetness
  • 1 tablespoon Gelatin Powder, unflavored
  • 3 tablespoons Cold Water, to bloom the gelati
  • 1 teaspoon Vanilla Extract, pure and authentic
  • 1 teaspoon Lemon Juice, to brighten the fruit

Method
 

  1. Prepare the Fruit: Wash and hull the strawberries, then blend until smooth. Pass through a fine-mesh sieve if a refined texture is desired.
  2. Bloom the Gelatin: Combine cold water and gelatin powder in a bowl and let sit for five minutes. Warm gently until clear.
  3. Sweeten the Purée: Stir in honey, vanilla extract, and lemon juice into the berry blend.
  4. Combine Gelatin and Fruit: Whisk the liquid gelatin into the strawberry mixture.
  5. Whip the Cream: In a chilled bowl, whisk cream to stiff peaks.
  6. The Gentle Fold: Mix a dollop of whipped cream into strawberry base, then fold in remaining cream.
  7. Portion and Chill: Spoon into serving dishes and chill for at least four hours.
  8. Set the Dessert: Refrigerate to allow flavors to meld.

Notes

Always ensure cream is very cold before whipping. Gently fold to maintain air. Do not boil gelatin. Store covered in the fridge and consume within two to three days.
