- Sweeten the Purée: Stir in honey, vanilla extract, and lemon juice into the berry blend.
- Combine Gelatin and Fruit: Whisk the liquid gelatin into the strawberry mixture.
- Whip the Cream: In a chilled bowl, whisk cream to stiff peaks.
- The Gentle Fold: Mix a dollop of whipped cream into strawberry base, then fold in remaining cream.
- Portion and Chill: Spoon into serving dishes and chill for at least four hours.
- Set the Dessert: Refrigerate to allow flavors to meld.
Notes
Always ensure cream is very cold before whipping. Gently fold to maintain air. Do not boil gelatin. Store covered in the fridge and consume within two to three days.
