Method
- Open a chilled can of full-fat coconut milk and scoop out the thick cream. Whip until light and airy, then set aside.
- In a high-speed blender, combine the frozen strawberries, coconut milk, collagen peptides, and sweetener. Blend until smooth.
- Smear the whipped coconut cream against the inside walls of a tall, clear glass.
- Gently pour the strawberry mixture into the decorated glass.
- Top with remaining whipped cream and a fresh strawberry slice.
Notes
Ensure the coconut milk is chilled for optimal whipping. If the smoothie is too thick, add a little more coconut milk for desired consistency.
