Ingredients
  

  • 1 cup frozen strawberries
  • 1 cup coconut milk
  • 1 scoop collagen peptides
  • 1/4 cup coconut cream
  • 1 tablespoon maple syrup or 1 Medjool date
  • 1/2 teaspoon vanilla bean paste

Method
 

  1. Open a chilled can of full-fat coconut milk and scoop out the thick cream. Whip until light and airy, then set aside.
  2. In a high-speed blender, combine the frozen strawberries, coconut milk, collagen peptides, and sweetener. Blend until smooth.
  3. Smear the whipped coconut cream against the inside walls of a tall, clear glass.
  4. Gently pour the strawberry mixture into the decorated glass.
  5. Top with remaining whipped cream and a fresh strawberry slice.

Notes

Ensure the coconut milk is chilled for optimal whipping. If the smoothie is too thick, add a little more coconut milk for desired consistency.
