Equipment

  • mixing bowl
  • whisk
  • measuring spoons
  • glass
  • saucepan or microwave-safe mug

Method

  1. In a small bowl or cup, whisk together the pumpkin puree, maple syrup or sweetener, pumpkin pie spice, and vanilla extract until smooth.
  2. Add the cooled coffee or espresso and stir until fully combined.
  3. Pour in the unsweetened almond milk and mix well. If you want a warmer drink, gently heat the mixture in a saucepan or microwave; for an iced drink, keep it cold.
  4. If serving iced, fill a glass with ice cubes and pour the drink over the ice.
  5. Top with a light sprinkle of pumpkin pie spice and, if desired, a small amount of sugar-free whipped topping.
  6. Serve immediately and enjoy your low-calorie fall-inspired drink.

Notes

Adjust the sweetness to taste, and use either brewed coffee or espresso depending on how strong you want the drink. For a warmer version, heat gently so the almond milk does not scorch.
