Method
 

  1. Preheat the oven to 375°F (190°C) and lightly grease an 8x8-inch baking dish or small oven-safe skillet.
  2. In a large bowl, mix the softened cream cheese and sour cream until smooth and creamy.
  3. Stir in the smoked Gouda, cheddar, crumbled bacon, chives, Worcestershire sauce, garlic powder, onion powder, black pepper, smoked paprika, and a pinch of salt.
  4. Spread the mixture evenly into the prepared baking dish.
  5. Bake for 20 to 25 minutes, until the dip is hot, bubbling around the edges, and lightly golden on top.
  6. Remove from the oven and let cool for 5 minutes.
  7. Garnish with additional chives and serve warm with crackers, toasted bread, tortilla chips, or vegetable sticks.

Notes

For the best texture, make sure the cream cheese is fully softened before mixing. You can substitute regular Gouda for smoked Gouda, but the dip will have a milder flavor. Serve immediately for the creamiest result.
