Method
- Bloom the gelatin by sprinkling it over 1/2 cup of cold milk and letting it sit for 5-10 minutes.
- Heat the remaining milk in a saucepan over medium-low heat, adding the sweetener and pinch of salt until dissolved.
- Combine the bloomed gelatin mixture with the hot milk, whisking until the gelatin is completely dissolved.
- Remove from heat and stir in the vanilla extract.
- Strain the mixture through a fine-mesh strainer into molds or ramekins.
- Cool to room temperature, then refrigerate for at least 4 hours or overnight to set.
- Unmold and serve.
Notes
Use grass-fed gelatin for better quality. Substitute dairy with coconut milk for a plant-based version. Avoid boiling the gelatin to ensure it sets properly.
