Ingredients
  

  • 3 cups organic whole milk
  • 2 tablespoons unflavored gelatin powder
  • 1/3 cup natural sweetener (honey, maple syrup, or organic cane sugar)
  • 1 teaspoon pure vanilla extract
  • Pinch of sea salt

Method
 

  1. Bloom the gelatin by sprinkling it over 1/2 cup of cold milk and letting it sit for 5-10 minutes.
  2. Heat the remaining milk in a saucepan over medium-low heat, adding the sweetener and pinch of salt until dissolved.
  3. Combine the bloomed gelatin mixture with the hot milk, whisking until the gelatin is completely dissolved.
  4. Remove from heat and stir in the vanilla extract.
  5. Strain the mixture through a fine-mesh strainer into molds or ramekins.
  6. Cool to room temperature, then refrigerate for at least 4 hours or overnight to set.
  7. Unmold and serve.

Notes

Use grass-fed gelatin for better quality. Substitute dairy with coconut milk for a plant-based version. Avoid boiling the gelatin to ensure it sets properly.
