Ingredients
  

  • 3 pounds of Yukon Gold potatoes
  • high-quality unsalted grass-fed butter
  • all-purpose flour
  • whole milk
  • heavy cream
  • fresh garlic
  • fresh thyme
  • sea salt
  • black pepper
  • 1 small white onio

Method
 

  1. Preheat your oven to 350°F (175°C) and grease your baking dish with butter.
  2. Slice the potatoes and onions into rounds approximately 1/8-inch thick.
  3. Melt the butter in a saucepan over medium heat and whisk in the flour, cooking for 1-2 minutes.
  4. Slowly pour in the milk and heavy cream while whisking, adding garlic, thyme, salt, and pepper; cook until thickened.
  5. Layer half of the potato and onion slices in the dish, pour in half of the sauce, and repeat the layers.
  6. Cover with foil and bake for 45 minutes, then remove foil and bake for another 30-40 minutes until golden brown.
  7. Allow to rest for 10-15 minutes before serving.

Notes

Ensure potato slices are not rinsed to retain starches. Use room temperature milk to prevent clumping.
