Ingredients
  

  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup plant-based milk
  • 1 teaspoon apple cider vinegar
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons red food coloring
  • 4 oz plant-based cream cheese
  • 2 cups powdered sugar
  • 2 tablespoons plant-based milk (for glaze)
  • ½ teaspoon vanilla extract (for glaze)

Method
 

  1. Preheat your oven to 350°F (175°C) and lightly grease your donut pan(s).
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
  3. In a separate medium bowl, combine the plant-based milk, apple cider vinegar, vegetable oil, and vanilla extract. Add the red food coloring and mix until consistent.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined.
  5. Spoon or pipe the batter into the prepared donut cavities, filling them about two-thirds full.
  6. Bake for 10-12 minutes or until a toothpick inserted comes out clean.
  7. Let the donuts cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  8. Prepare the glaze by beating the softened cream cheese until smooth, then gradually mix in the powdered sugar and plant-based milk until creamy.
  9. Once the donuts are cool, dip the tops into the cream cheese glaze and allow excess to drip off.
  10. Let the glaze set for 15-20 minutes before serving.
