Method
- Prepare the Fruit Puree: Blend the mixed berries and fresh lemon juice until smooth.
- Combine Liquids & Agar-Agar: In a saucepan, sprinkle agar-agar over cold water or plant milk. Let it bloom for 2-5 minutes.
- Heat & Dissolve: Whisk continuously while heating until the mixture boils. Reduce heat and simmer for 1-2 minutes.
- Sweeten & Season: Stir in maple syrup and sea salt. Adjust sweetness as desired.
- Incorporate Protein Powder: Mix a couple of tablespoons of hot agar-agar liquid with protein powder to form a paste, then whisk back into the main mixture.
- Combine with Fruit Puree: Fold the fruit puree into the agar-agar mixture until evenly combined.
- Pour & Chill: Pour into serving dishes and let sit at room temperature for 10-15 minutes before chilling in the refrigerator for 2-4 hours.
Notes
Use organic fruits for the best flavor. Can be adapted with different fruits and protein powder flavors.
