  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup plant-based protein powder
  • 1/2 cup all-purpose flour (or gluten-free blend)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup plant-based milk
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • Optional: dark chocolate chips, chopped nuts, or dried fruits

Method
 

  1. Preheat your oven to 175°C (350°F) and line an 8x8 inch baking pan with parchment paper.
  2. In a large mixing bowl, combine cocoa powder, protein powder, flour, granulated sugar, brown sugar, baking powder, and salt, whisking until no lumps remain.
  3. In a separate bowl, mix the plant-based milk, melted coconut oil, and vanilla extract until well combined.
  4. Pour the wet mixture into the dry ingredients and mix until just combined without overmixing.
  5. Fold in any optional mix-ins if desired.
  6. Pour the batter into the prepared pan and spread evenly. Bake for 20-25 minutes until a toothpick comes out with moist crumbs.
