Ingredients
  

  • 2 cups Fresh Pomegranate Juice
  • 1.5 cups Dry Rosé Wine
  • 1/2 cup Organic Agave Syrup
  • 2 teaspoons Agar-Agar Powder
  • 1 tablespoon Lemon Juice
  • Fresh Pomegranate Arils
  • Edible Rose Petals

Method
 

  1. In your saucepan, combine the cold pomegranate juice and the agar-agar powder. Whisk vigorously while the liquid is still cold.
  2. Place the saucepan over medium heat. Bring the mixture to a gentle boil, whisking constantly. Once it reaches a boil, reduce the heat and simmer for exactly two minutes.
  3. Remove the pan from the heat. Slowly pour in the rosé wine, agave syrup, and lemon juice.
  4. Place a few fresh pomegranate arils into the bottom of each mold.
  5. Carefully pour the warm mixture through a fine-mesh strainer into your prepared molds.
  6. Let the molds sit at room temperature for about 15 minutes.
  7. Transfer the molds to the refrigerator for at least two hours.
  8. Gently pull the edges of the mold away from the gelatin and invert onto a chilled plate.
  9. Garnish with a few more arils and edible rose petals.

Notes

Use high-quality organic ingredients for the best flavor. Ensure you boil the agar-agar mixture for at least 2 minutes to activate. This gelatin is vegan and does not require refrigeration to initially set.
