Ingredients
  

  • 2 tablespoons unflavored gelatin powder
  • 1.5 cups filtered water
  • 1/4 cup fresh or frozen mixed berries
  • 3 tablespoons erythritol or other natural sweetener
  • 2 tablespoons freshly squeezed lemon juice

Method
 

  1. Prepare the berries by blending them with 1/4 cup of water until smooth.
  2. Strain the berry puree through a fine-mesh sieve to remove seeds and pulp.
  3. Bloom the gelatin by sprinkling it over 1/2 cup of cold water for 5-10 minutes.
  4. Heat the remaining 1.5 cups of water in a saucepan until it simmers, then remove from heat.
  5. Dissolve the bloomed gelatin in the hot water by whisking continuously until fully dissolved.
  6. Combine the strained berry puree, sweetener, and lemon juice with the gelatin mixture, whisking until smooth.
  7. Pour the mixture into a serving dish or molds and chill in the refrigerator for at least 4-6 hours, or overnight.
  8. Once set, cut into squares or unmold to serve.

Notes

Make sure to strain the berry puree for a smooth texture. Store in an airtight container in the refrigerator for up to 5-7 days.
