Method
- Prepare the berries by blending them with 1/4 cup of water until smooth.
- Strain the berry puree through a fine-mesh sieve to remove seeds and pulp.
- Bloom the gelatin by sprinkling it over 1/2 cup of cold water for 5-10 minutes.
- Heat the remaining 1.5 cups of water in a saucepan until it simmers, then remove from heat.
- Dissolve the bloomed gelatin in the hot water by whisking continuously until fully dissolved.
- Combine the strained berry puree, sweetener, and lemon juice with the gelatin mixture, whisking until smooth.
- Pour the mixture into a serving dish or molds and chill in the refrigerator for at least 4-6 hours, or overnight.
- Once set, cut into squares or unmold to serve.
Notes
Make sure to strain the berry puree for a smooth texture. Store in an airtight container in the refrigerator for up to 5-7 days.
