  • 2 envelopes unflavored gelatin powder (about 14g or 2 tablespoons)
  • 1 cup cold water, divided
  • 1 cup boiling water
  • 1.5 cups fresh strawberry or raspberry puree
  • ¼ cup natural sweetener (honey, maple syrup, or agave nectar)
  • 1 tablespoon fresh lemon juice (optional)

Method
 

  1. Bloom the Gelatin: Pour 1 cup cold water into a medium bowl. Sprinkle two envelopes of gelatin powder evenly and let stand for 5-10 minutes.
  2. Prepare the Fruit Base: Heat 1 cup boiling water in a small saucepan until hot.
  3. Dissolve the Gelatin: Pour hot water over bloomed gelatin and whisk continuously for 2-3 minutes until fully dissolved and clear.
  4. Combine Flavors: Add fruit puree and natural sweetener. Whisk until well combined. Adjust sweetness.
  5. Pour and Chill: Carefully pour the mixture into your chosen serving dish or molds.
  6. Refrigerate Until Firm: Chill undisturbed for at least 4-6 hours or preferably overnight until completely firm.

Notes

Ensure proper blooming of the gelatin to prevent clumping. Adjust sweetness to taste. Store in an airtight container for up to 3-5 days.
