Ingredients
  

  • 4 to 5 large, ripe peaches
  • Agar-agar powder
  • Maple syrup or agave nectar
  • Fresh lemon juice
  • Filtered water
  • Vanilla bean or extract
  • Fresh mint leaves

Method
 

  1. Wash the peaches thoroughly. Peel three peaches, reserving the skins. Dice the flesh into small pieces and slice two peaches into thin wedges.
  2. Blend the diced peach flesh with lemon juice and vanilla until smooth.
  3. In a saucepan, mix cold water and agar-agar, let it bloom for 2 minutes.
  4. Bring to a gentle boil while whisking for 2-3 minutes to activate the agar-agar.
  5. Stir in sweetener and blend in the peach purée, whisking continuously without boiling vigorously.
  6. Layer peach wedges at the bottom of molds and pour the mixture over them, removing bubbles with a toothpick.
  7. Cool to room temperature, then refrigerate for 1-2 hours to set.
  8. To serve, unmold and garnish with mint.
