- Wash the peaches thoroughly. Peel three peaches, reserving the skins. Dice the flesh into small pieces and slice two peaches into thin wedges.
- Blend the diced peach flesh with lemon juice and vanilla until smooth.
- In a saucepan, mix cold water and agar-agar, let it bloom for 2 minutes.
- Bring to a gentle boil while whisking for 2-3 minutes to activate the agar-agar.
- Stir in sweetener and blend in the peach purée, whisking continuously without boiling vigorously.
- Layer peach wedges at the bottom of molds and pour the mixture over them, removing bubbles with a toothpick.
- Cool to room temperature, then refrigerate for 1-2 hours to set.
- To serve, unmold and garnish with mint.
