  • 2.5 lbs Russet or Yukon Gold Potatoes
  • 1/2 cup Plant-Based Milk (Unsweetened Almond or Oat)
  • 1/4 cup Nutritional Yeast
  • 1/4 cup Fresh Chives, finely chopped
  • 1/4 cup Fresh Parsley, finely chopped
  • 2 cloves Garlic, minced
  • 2 tbsp Olive Oil, plus more for greasing
  • 1 large Yellow Onion, finely diced
  • 1 tsp Smoked Paprika
  • 1/2 tsp Black Pepper, freshly ground
  • 1 tsp Sea Salt, or to taste

Method
 

  1. Prepare the Potatoes: Peel and cut the potatoes into 1-inch chunks, boil until fork-tender.
  2. Drain and Mash: Drain the potatoes, mash until smooth.
  3. Sauté Aromatics: Sauté onions and garlic in olive oil until softened.
  4. Combine and Season: Mix the sautéed mixture with mashed potatoes, add remaining ingredients, and season.
  5. Prepare for Baking: Preheat the oven to 375°F (190°C) and grease a baking dish.
  6. Assemble the Pie: Spread the potato mixture in the dish and smooth out the top.
  7. Bake to Golden Perfection: Bake for 30-35 minutes until golden brown and bubbly.
