  • 2 large Russet potatoes
  • 1/2 cup grated 24-month aged Parmigiano Reggiano
  • 2 tablespoons clarified butter (ghee)
  • 1/2 teaspoon garlic powder
  • pinch of smoked paprika
  • fine sea salt to taste
  • fresh cracked black pepper to taste
  • chives for garnish

Method
 

  1. Grate the potatoes and soak in cold water to remove excess starch.
  2. Squeeze shreds dry in a kitchen towel to ensure no moisture remains.
  3. Toss potato shreds with cheese, garlic powder, paprika, salt, and pepper.
  4. Preheat skillet over medium-high heat and add ghee.
  5. Spread and press the potato mixture evenly in the skillet without disturbing for 5-6 minutes.
  6. Flip the mixture once edges turn dark gold and cook for another 5 minutes.
  7. Increase heat to high for the final 60 seconds to crisp the cheese.
