- Wash the oranges, zest two while avoiding the white pith, and juice all to yield about 1.5 cups of strained juice. Set zest and juice aside.
- In a saucepan, combine 1 cup of water and 3 tablespoons of agar-agar powder. Whisk well until dissolved. Let sit for 5-10 minutes to bloom.
- Place the saucepan over medium heat, bring to a gentle boil while stirring constantly, then reduce heat to low and simmer for 2-3 minutes until agar-agar is completely dissolved.
- Stir in the granulated sugar, the fresh orange juice, lemon juice, and sea salt until the sugar dissolves. Simmer for another 2-3 minutes to meld flavors.
- (Optional) Stir in the reserved zest for intense orange flavor.
- Carefully pour the hot mixture into a prepared shallow baking dish lined with parchment or silicone molds. Fill evenly.
- Let cool at room temperature for 30 minutes, then refrigerate for 2-3 hours or preferably overnight until firm.
- Once set, unmold the candy. Shape using a sharp knife or cookie cutters.
- Roll each piece of candy in extra granulated sugar, desiccated coconut, or powdered sugar if desired to prevent sticking.
- Serve and enjoy your homemade Orange Jelly Candy.
