Ingredients
  

  • 4-5 medium-sized fresh oranges (juice and zest)
  • 1.5 cups granulated sugar
  • 3 tablespoons agar-agar powder
  • 1 cup water
  • 1 tablespoon lemon juice
  • 1/4 teaspoon sea salt
  • Optional coatings: extra granulated sugar, desiccated coconut, powdered sugar

Method
 

  1. Wash the oranges, zest two while avoiding the white pith, and juice all to yield about 1.5 cups of strained juice. Set zest and juice aside.
  2. In a saucepan, combine 1 cup of water and 3 tablespoons of agar-agar powder. Whisk well until dissolved. Let sit for 5-10 minutes to bloom.
  3. Place the saucepan over medium heat, bring to a gentle boil while stirring constantly, then reduce heat to low and simmer for 2-3 minutes until agar-agar is completely dissolved.
  4. Stir in the granulated sugar, the fresh orange juice, lemon juice, and sea salt until the sugar dissolves. Simmer for another 2-3 minutes to meld flavors.
  5. (Optional) Stir in the reserved zest for intense orange flavor.
  6. Carefully pour the hot mixture into a prepared shallow baking dish lined with parchment or silicone molds. Fill evenly.
  7. Let cool at room temperature for 30 minutes, then refrigerate for 2-3 hours or preferably overnight until firm.
  8. Once set, unmold the candy. Shape using a sharp knife or cookie cutters.
  9. Roll each piece of candy in extra granulated sugar, desiccated coconut, or powdered sugar if desired to prevent sticking.
  10. Serve and enjoy your homemade Orange Jelly Candy.
