Method
- Prepare the Orange Juice: Wash oranges and extract juice, then strain through a fine-mesh sieve.
- Bloom the Agar-Agar: Combine cold water with agar-agar in a saucepan and let sit for 5-10 minutes.
- Combine and Heat: Add strained orange juice and bring to a boil for at least 2 minutes.
- Sweeten and Infuse: Reduce heat, add sugar, stir until dissolved, and add zest if desired.
- Strain and Pour: Strain the mixture again and pour into molds quickly.
- Chill to Perfection: Let cool for 15-20 minutes at room temperature, then refrigerate for 2-3 hours.

Ensure to bloom agar-agar and boil for full activation. Use a scale for precise measurements. Store in an airtight container in the refrigerator and consume within 3-5 days.
