Ingredients
  

  • 3 cups (720ml) freshly squeezed orange juice
  • 2 teaspoons (6g-8g) agar-agar powder
  • 1/2 cup (100g-120g) granulated sugar
  • 1/2 cup (120ml) cold water
  • Optional: 1-2 teaspoons orange zest

Method
 

  1. Prepare the Orange Juice: Wash oranges and extract juice, then strain through a fine-mesh sieve.
  2. Bloom the Agar-Agar: Combine cold water with agar-agar in a saucepan and let sit for 5-10 minutes.
  3. Combine and Heat: Add strained orange juice and bring to a boil for at least 2 minutes.
  4. Sweeten and Infuse: Reduce heat, add sugar, stir until dissolved, and add zest if desired.
  5. Strain and Pour: Strain the mixture again and pour into molds quickly.
  6. Chill to Perfection: Let cool for 15-20 minutes at room temperature, then refrigerate for 2-3 hours.

Notes

Ensure to bloom agar-agar and boil for full activation. Use a scale for precise measurements. Store in an airtight container in the refrigerator and consume within 3-5 days.
