Method
- Preheat your mini waffle maker and skillet over medium-high heat.
- Sift the flour, baking powder, and salt into a large bowl.
- In a separate vessel, whisk the eggs, milk, and melted butter. Slowly incorporate the wet mixture into the dry ingredients.
- Pour approximately 2 to 3 tablespoons of batter into the waffle maker and cook until steam stops escaping, about 3-4 minutes.
- Cook the sausage patties in the skillet until the internal temperature reaches 160°F (71°C).
- Cook the eggs in the skillet, using a small round mold to match the diameter of the waffles.
- Place a slice of cheddar cheese on the hot sausage patty and let it melt while the egg finishes cooking.
- Assemble the sandwich by layering one waffle, sausage, cheese, egg, and topping with another waffle.
- Lightly press the sandwich together and optionally, return it to the waffle maker for extra crunch.
Notes
For a healthier profile, substitute oat flour for all-purpose flour and turkey or plant-based sausage for pork sausage. Use Greek yogurt instead of butter for lower-calorie options.
