Ingredients

  • 1.5 Cups All-Purpose Flour
  • 1 Tablespoon Baking Powder
  • 4 Large Pasture-Raised Eggs
  • 1.25 Cups Whole Milk
  • 1/3 Cup Unsalted Butter (Melted)
  • 6-8 Pieces Breakfast Sausage Patties
  • 6-8 Slices Sharp Cheddar Cheese
  • 1/2 Teaspoon Sea Salt

Method

  1. Preheat your mini waffle maker and skillet over medium-high heat.
  2. Sift the flour, baking powder, and salt into a large bowl.
  3. In a separate vessel, whisk the eggs, milk, and melted butter. Slowly incorporate the wet mixture into the dry ingredients.
  4. Pour approximately 2 to 3 tablespoons of batter into the waffle maker and cook until steam stops escaping, about 3-4 minutes.
  5. Cook the sausage patties in the skillet until the internal temperature reaches 160°F (71°C).
  6. Cook the eggs in the skillet, using a small round mold to match the diameter of the waffles.
  7. Place a slice of cheddar cheese on the hot sausage patty and let it melt while the egg finishes cooking.
  8. Assemble the sandwich by layering one waffle, sausage, cheese, egg, and topping with another waffle.
  9. Lightly press the sandwich together and optionally, return it to the waffle maker for extra crunch.

Notes

For a healthier profile, substitute oat flour for all-purpose flour and turkey or plant-based sausage for pork sausage. Use Greek yogurt instead of butter for lower-calorie options.
