Ingredients
  

  • 2 tablespoons ceremonial grade matcha powder
  • 2 teaspoons agar-agar powder (for matcha)
  • 2 cups filtered water (for matcha)
  • ¼ cup maple syrup or agave nectar
  • 1 teaspoon agar-agar powder (for clear cubes)
  • 1½ cups filtered water (for clear cubes)
  • 1-2 tablespoons granulated sugar (optional)
  • 1½ cups mixed fresh fruits (e.g., strawberries, blueberries, kiwi)
  • ½ cup sweetened red bean paste (anko)
  • 6-8 pieces mochi or shiratama dango
  • ¼ cup kuromitsu (brown sugar syrup)
  • A handful of toasted coconut flakes or chopped nuts (optional)

Method
 

  1. Whisk 2 tablespoons of matcha powder with ¼ cup of the filtered water until a smooth paste forms.
  2. In a saucepan, combine 1¾ cups of filtered water and 2 teaspoons of agar-agar powder and whisk well.
  3. Bring to a gentle boil while stirring constantly, simmer for 2-3 minutes, then remove from heat.
  4. Stir in the matcha slurry and maple syrup, whisking until uniform.
  5. Pour into an 8x8 inch dish, cool at room temperature for 30 minutes, then refrigerate for at least 2 hours until firm.
  6. For clear agar cubes, combine 1½ cups of filtered water and 1 teaspoon of agar-agar in another saucepan, boil, simmer for 2-3 minutes, then pour into a shallow dish and refrigerate until firm.
  7. Prepare toppings by washing and slicing fresh fruits, and prepare mochi as instructed.
  8. Assemble by cutting set agar-agar into cubes and arranging in bowls with fruit, red bean paste, and mochi, drizzling with kuromitsu before serving.
