Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon fine sea salt
  • 1 cup plant-based milk (unsweetened almond or oat milk)
  • 1/2 cup pure maple syrup
  • 1/2 cup melted vegan butter
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 1-2 tablespoons pure maple syrup (for glaze)
  • 1 tablespoon plant-based milk (for glaze)

Method
 

  1. Preheat your oven to 350°F (175°C) and prepare a 9x13 inch baking pan with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, mix the plant-based milk, maple syrup, melted vegan butter, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared baking pan and smooth the top. Bake for 25-30 minutes until a toothpick comes out clean.
  6. Allow the bars to cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
  7. Prepare the glaze by whisking together powdered sugar, maple syrup, and plant-based milk until smooth.
  8. Once the bars are cooled, pour the glaze over the top and let it set for 15-20 minutes before slicing and serving.

Notes

To store, keep the bars in an airtight container at room temperature for 2-3 days. They can also be stored in the refrigerator for up to a week or frozen for 2-3 months. Reheat gently if desired.
