Method
- Preheat your oven to 350°F (175°C) and prepare a 9x13 inch baking pan with parchment paper.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, mix the plant-based milk, maple syrup, melted vegan butter, and vanilla extract.
- Combine the wet ingredients with the dry ingredients and mix until just combined.
- Pour the batter into the prepared baking pan and smooth the top. Bake for 25-30 minutes until a toothpick comes out clean.
- Allow the bars to cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
- Prepare the glaze by whisking together powdered sugar, maple syrup, and plant-based milk until smooth.
- Once the bars are cooled, pour the glaze over the top and let it set for 15-20 minutes before slicing and serving.
Notes
To store, keep the bars in an airtight container at room temperature for 2-3 days. They can also be stored in the refrigerator for up to a week or frozen for 2-3 months. Reheat gently if desired.
