  • Fresh Heirloom Carrots
  • Thick-Cut Smoked Baco
  • Pure Maple Syrup
  • Extra Virgin Olive Oil
  • Fresh Thyme Sprigs
  • Sea Salt and Cracked Black Pepper
  • Apple Cider Vinegar

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Scrub the carrots thoroughly and cut them into uniform sticks or leave them whole if slender.
  3. In a large mixing bowl, combine maple syrup, olive oil, apple cider vinegar, and thyme. Whisk until emulsified.
  4. Add the carrots to the bowl and toss them to ensure they are well-coated.
  5. Chop the bacon into small lardons and scatter over the carrots on the baking sheet.
  6. Roast in the center of the oven for 25 to 30 minutes, turning with tongs halfway through.
  7. Broil for the last 2 minutes to create crispy, charred edges.
  8. Remove from the oven, sprinkle with extra sea salt, and let rest for five minutes.

Notes

Ensure all carrot pieces are of similar diameter for even cooking. Use parchment paper to prevent burnt sugar and maintain glaze quality.
