Method
- Prepare the fruit: Peel the mangoes and blend the flesh until completely smooth. Set aside.
- Pit the cherries and cut them into halves.
- Bloom the agar-agar: Place the filtered water in your saucepan and sprinkle the agar-agar powder over the surface. Let it sit for about five minutes.
- Heats the mixture: Turn the heat to medium and bring the water to a gentle boil, whisking constantly until the agar-agar dissolves completely.
- Incorporate sweeteners and flavors: Stir in the maple syrup, lime juice, and vanilla bean paste.
- Combine with mango: Slowly pour the mango puree into the hot liquid, whisking vigorously.
- Assemble the layers: Arrange the cherry pieces at the bottom of your mold or glass dish and pour the mango mixture over the cherries.
- Chill and set: Allow the mixture to cool at room temperature for fifteen minutes, then refrigerate for at least two hours until firm.
Notes
For a softer set, reduce the agar-agar by a quarter teaspoon. Store in an airtight container in the refrigerator for up to five days.
