Ingredients
  

  • 6-8 medium fresh mandarin oranges
  • 1/2 cup granulated sugar
  • 2 packets (about 4 tablespoons) unflavored gelatin powder
  • 1/2 cup cold water
  • 1.5 cups boiling water
  • Optional: Fresh mint leaves
  • Optional: 1 teaspoon mandarin zest

Method
 

  1. Prepare the Mandarins: Wash mandarins, zest one if desired, juice them until you have 1.5 cups of juice. Strain juice through a fine-mesh sieve.
  2. Bloom the Gelatin: Sprinkle gelatin powder over 1/2 cup of cold water and let sit for 5-10 minutes.
  3. Heat the Liquids: Boil 1.5 cups of water, then pour over bloomed gelatin. Add sugar and zest, whisk until dissolved.
  4. Combine Juices: Stir in strained mandarin juice and adjust sugar as needed.
  5. Pour and Chill: Transfer mixture to serving dish or ramekins, add segments if using, and refrigerate for at least 4 hours.
  6. Serve: Once set, garnish with mandarin segments and mint before serving.

Notes

Strain the juice twice for a clearer jelly. Ensure to bloom the gelatin properly. Unmold by greasing molds beforehand or dipping in warm water.
