  • 1 cup full-fat Greek yogurt
  • 1 tablespoon unflavored gelatin powder
  • 1/4 cup liquid stevia or monk fruit
  • 1 teaspoon pure vanilla extract
  • 1/2 cup filtered water
  • A pinch of sea salt

Method
 

  1. Bloom the Gelatin: Pour the filtered water into a small saucepan and sprinkle the gelatin powder evenly over the surface. Let it sit for about five minutes.
  2. Gently Heat: Place the saucepan over low heat. Stir constantly until the gelatin has completely dissolved.
  3. Prepare the Yogurt Base: In a mixing bowl, whisk together the Greek yogurt, sweetener, vanilla extract, and sea salt until smooth.
  4. Combine the Mixtures: Slowly pour the warm gelatin liquid into the yogurt base while whisking continuously.
  5. Portion and Chill: Pour the mixture into molds or ramekins and refrigerate for at least four hours, preferably overnight.
  6. Unmold and Serve: Dip the bottom of the molds in warm water to release the gelatin, and serve.

Notes

Store in an airtight container in the refrigerator for up to five days. This dish is best served cold and not suitable for freezing.
