Ingredients
  

  • One large head of cauliflower, cut into bite-sized florets
  • One cup of full-fat sour cream
  • Two cups of freshly grated sharp cheddar cheese
  • Six slices of thick-cut, pasture-raised baco
  • Half a cup of thinly sliced green onions
  • Two cloves of minced garlic
  • Two tablespoons of unsalted butter
  • Sea salt and black pepper to taste
  • A pinch of smoked paprika

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Cut the cauliflower into uniform florets and steam for about 5 to 7 minutes until tender but firm.
  3. Cook the bacon slices in a cold skillet over medium heat until crispy, then drain and crumble.
  4. In a large mixing bowl, combine sour cream, half of the shredded cheddar, minced garlic, and melted butter. Whisk until smooth.
  5. Add steamed cauliflower to the bowl and gently fold until coated in the cream mixture.
  6. Transfer to a baking dish, top with remaining cheddar and crumbled bacon.
  7. Bake for 20 to 25 minutes until the cheese is melted and golden brown.
  8. Let it rest for 5 minutes, then garnish with green onions and serve.

Ensure not to overcook the cauliflower when steaming to maintain texture. Grate cheese fresh for best melting results.
