- Preheat your oven to 375°F (190°C).
- Cut the cauliflower into uniform florets and steam for about 5 to 7 minutes until tender but firm.
- Cook the bacon slices in a cold skillet over medium heat until crispy, then drain and crumble.
- In a large mixing bowl, combine sour cream, half of the shredded cheddar, minced garlic, and melted butter. Whisk until smooth.
- Add steamed cauliflower to the bowl and gently fold until coated in the cream mixture.
- Transfer to a baking dish, top with remaining cheddar and crumbled bacon.
- Bake for 20 to 25 minutes until the cheese is melted and golden brown.
- Let it rest for 5 minutes, then garnish with green onions and serve.
Notes
Ensure not to overcook the cauliflower when steaming to maintain texture. Grate cheese fresh for best melting results.
