  • 1 cup of cold water or pineapple juice
  • 1 20-ounce can of crushed pineapple, thoroughly drained
  • 1 cup of low-fat cottage cheese
  • 1/2 cup of finely chopped walnuts
  • optional: finely diced celery

Method
 

  1. Hydrate the Gelatin: Mix boiling water with gelatin powder, whisk until dissolved.
  2. Thermal Management: Stir in cold water or pineapple juice, refrigerate for 30 to 45 minutes.
  3. Monitor the Viscosity: Wait until the mixture is syrupy.
  4. Fold in the Solids: Gently mix in pineapple, cottage cheese, and walnuts.
  5. The Final Cast: Pour into mold, tap to remove air bubbles.
  6. The Set Phase: Refrigerate for at least 4 hours.
  7. Unmolding: Dip mold in warm water, invert onto serving platter.
