Ingredients
  

  • 2 cups organic pineapple juice
  • 1/2 cup freshly squeezed lemon juice
  • 1/2 cup organic cane sugar or agave syrup
  • 2 teaspoons agar-agar powder
  • 1 cup finely diced fresh pineapple
  • a pinch of turmeric powder (optional)
  • fresh mint leaves for garnish

Method
 

  1. Prep your fruit; if using fresh pineapple, simmer diced pieces in water for 5 minutes.
  2. In a saucepan, combine pineapple juice and lemon juice; whisk together.
  3. Gradually sprinkle agar-agar powder over the cold liquid and let it bloom for about 2 minutes.
  4. Heat the mixture to medium-high while whisking constantly until it reaches a full boil.
  5. Reduce heat to simmer, add sweetener and turmeric (if using), whisk until dissolved.
  6. Remove from heat; stir in pre-boiled pineapple chunks.
  7. Pour liquid into molds or a glass dish; allow to cool at room temperature for 15 minutes.
  8. Transfer to refrigerator; chill for at least 2-4 hours, preferably overnight.
  9. Once set, invert onto a serving plate.

Notes

Store in the refrigerator in an airtight container for up to 5 days. Do not freeze. If surface dries out, mist with pineapple juice before serving.
