- Pour 1/2 cup of cold filtered water into a small bowl. Sprinkle gelatin over the surface and let it bloom for 5 to 10 minutes.
- Zest three lemons into a saucepan with 1.5 cups of water and 3/4 cup of sugar. Heat over medium-low until sugar dissolves, then remove from heat.
- Add the bloomed gelatin to the warm syrup, stirring gently until fully incorporated.
- Juice the lemons to obtain 1 cup and add to the gelatin mixture with a pinch of salt, stirring slowly.
- Strain the mixture through a fine-mesh sieve into a mold and refrigerate for 4 to 6 hours until set.
