  • 2 lbs Yukon Gold or red potatoes
  • 3 tablespoons Extra Virgin Olive Oil
  • 2 large Fresh Lemons
  • 4-5 cloves Garlic, minced
  • 2 tablespoons Fresh Rosemary, finely chopped
  • 1 tablespoon Fresh Thyme, stripped from stems
  • 1 teaspoon Dried Oregano
  • Sea Salt and Cracked Black Pepper, to taste
  • Red Pepper Flakes (optional)

Method
 

  1. Preheat your oven to 425°F (220°C). Scrub the potatoes thoroughly and cut them into uniform 1-inch cubes.
  2. In a large mixing bowl, whisk together olive oil, fresh lemon juice, lemon zest, minced garlic, rosemary, thyme, and oregano.
  3. Add the potato cubes to the bowl and toss until evenly coated. Season with sea salt and black pepper.
  4. Spread the potatoes in a single layer on a baking sheet, ensuring they are not crowded.
  5. Roast for 35 to 45 minutes, flipping halfway through until golden brown and fork-tender.
  6. Remove from the oven and sprinkle with fresh parsley or a squeeze of lemon juice before serving.
