Method
 

  1. Cream the butter and sugar in a mixing bowl until pale and fluffy.
  2. Incorporate egg yolks, vanilla paste, and lemon zest; mix until combined.
  3. Add sifted flour and salt; mix gently until no white streaks remain.
  4. Chill the dough for at least 30 minutes.
  5. Preheat oven to 350°F and line baking sheets with parchment paper.
  6. Scoop dough and shape into balls, placing them on prepared sheets.
  7. Create a well in each ball and fill with lemon curd.
  8. Bake for 10-12 minutes until edges are golden and centers are soft.
  9. Cool on baking sheet for 5 minutes before transferring to a wire rack.
